I like rhubarb! Ate lots of it as a kid in England. I suggest Rhubarb crumble!
Preheat oven to 350. Cut up 4-5 stalks of rhubarb into ~1-2cm chunks, toss in pie pan, set aside. To make the topping, combine 1 stick of butter, 1 cup of brown sugar, and 1 cup of white flour using a food processor (if you don't have one, best to melt the butter first...). Crumble topping over rhubarb pieces. Bake for 1h.

Correction: Best to actually soften (not melt) the butter if you don't have a food processor. Keeps the texture that way.

Also, they would always talk about rhubarb pie on Pushing Daisies and I could never picture what that tastes like.
